Okay, first I have to fully fess-up to the fact that here at Seattle Coffee Works, we were completely inspired by the concept of putting cold-brewed coffee on draft with nitrogen by a few our friends in the coffee industry. We tasted some really nice nitro-infused brews around Seattle, and if for no other reason than to simply have a load of fun doing a special project, we knew we had to get to work in our coffee lab. We nominated Bryan Norris as our mad coffee scientist, and all of the sudden we had kegs, large buckets, cheese cloth, hoses, and even an electric wine pump show up at the door step of our roastery.
Without lack of trial and error, Bryan and members of the SCW team ended up discovering that our flagship espresso roast, Seattle Space Blend is the absolute perfect companion to highly pressurized nitrogen. Starting by using that funny looking wine pump, they also developed a signature polishing process at the end of the brew, which removes a significant amount of the coffee fines from the beverage. This results in an incredibly smooth and refined, absolutely luxurious mouth feel, while also toning up flavor clarity of each of the components in the Seattle Space Blend.
The team also decided that we wanted our nitrogenated coffee beverage to keep it’s silky smooth body for a majority of the duration that it takes to actually consume a 12oz glass, this was not the result we’d experienced when ordering coffee on nitro draft at other establishments. Bryan cracked the code for this, discovering that by subjecting a freshly brewed keg of cold brewed coffee for a longer period of time, at a much higher pressure, that the nitrogen more fully infuses into the beverage, offering just the experience we were looking for. After making some fine adjustments to the recipe, and having our new nitrogen draft system installed at Ballard Coffee Works, we were ready to start pouring Cold Brew Coffee on Nitro for our customers! And Bam! What a hit!
For weeks on end, our Cold Brew on Nitro was one of our top selling beverages, but the story doesn’t end here. Getting a batch produced beverage which is actually as finely tuned as an espresso extraction to be consistently top-notch in quality, and always available to order, is actually really difficult! To be honest, we struggled to work out kinks in our process late into the fall season addressing product outage issues, and working the bugs out of our draft system.
Ultimately, this project has given us the result we sought and more. We’ve had a lot of fun developing a product we knew little about. And most of all, we’re all really proud to be serving what we all call our absolute favorite Nitro Cold Brew in town. Even now, we know that we’re still only at the beginning of what we can do with cold brewed coffee on draft.
